Question Atkins Bake Mix v's GNC Soy Bake Mix

Hello again,
Got some more questions for ya. I'm really interested in learning more about ingredients because I recognise I am going to have to learn these things if this WOE is going to become my WOL. I have purchased some GNC Soy Baking Mix for a recipe I got from Carb lite called "It tastes like your cheating chicken but you're not" (think it's meant to be locarb version of KFC only homemade) anywayyyyyyyyyy I have this other recipe for "Hamburger Onion Pie" also from Carb Lite and this recipe is asking for "Atkins Bake Mix". I know I can buy this from GNC also but I was wondering what you guys/gals thought of using the GNC soy baking mix instead of the Atkins Bake Mix???? Would I be making a BIG TASTE mistake if I did that???? What is the difference between the two?
Sorry to ask, it's just that I understand so little about the things we use in baking like flours, cornflour, baking powders/mixes etc and what role they play in the cooking/baking.
Anyway, thanks for your help! You're advice is helping transform me )
