Question site with LC recipes for 1 person

Hi everyone,
I ws wondering whether anyone knows of a website where I can find LC recipes with amounts for one person (or two). All the LC recipes I see around are calcuated for 8 people, and I'm getting so fed up of spending ages dividing stuff into eighths!!!

I know! Starting to feel like I'm the only LCer without a family of eight!! Only kidding, but would certainly be easier to work out what a serving size should really be...

I know how you feel. I will either scale down a recipe, or not bother usually. With some like the mock mac and cheese or zucchini lasagne there is a temptation to eat it all. If it's soemthing like quiche it just ends up in the freezer and probably tossed.

I've learned to try my own versions of things, or just do skillet emals. That's where everything gets tossed in a skillet and cooked together. It's fast and easy

one great benefit about cooking for 8 when you only have 1 mouth to feed is that you will have plenty left over. throw some of it into small containers and put in the freezer. then you can cook less often and have meals ready to go at a moments notice. I love having leftovers, i eat it for lunch the next day, and the rest goes in the freezer. it really is a time saver in the long run, and so much easier when the rest of the family wants pizza or something that i won't eat. i just pop my meal in the microwave and voila home cooked meal ready in minutes. but i do understand your point!

Have you had a good look through our recipe forums? I know many of the recipes I've posted (click here if you're interested) serve one or two. I'm sure I've seen many others do too.

Thanks that is a good start!! I would love to be one of those people who can just make ahead recipes in bulk and leave them in the fridge, but as someone reovering from an eating disorder, that's never going to be a safe strategy!!
