This is so easy and so tasty, I just had to post it.
It's even induction-approved!
1 lb boneless skinless chicken breast, diced
approx 1 cup greek dressing
1 zucchini, sliced
1 Tbsp olive oil
1 Tbsp diced onion
- Marinate the chicken with the greek dressing overnight.
- Heat olive oil in a large stir-fry pan
- add onion
- add chicken, cook until nearly done.
- add zucchini, stir-fry another five minutes or so, until zucchini is tender.
Makes 4 lunch-sized servings.
Ta-da! I loved it. I won't put the nutrition info, because it depends on how much marinade you cook it and serve it with. I don't like mine too saucy, and took most of it off before I ate it.
