Not a bad menu, but it seems like your haveing trouble parting from the low fat, low cal way of eating. To succeed the most at LC you actually need a lot of fat in your diet, your body won't burn your own fat untill you jump start it and force it to burn fat by eating mostly fat. You also shold try to have at least 1200 calories a day or your body thinks it's starving and won't give up andy stored fat. Try adding some more cheese, cream cheese, butter, olive oil, mayo, etc.
Vegetables are deffinitely reccommended, but you need to watch the carbs. The first two weeks you should only have a small salad and a medium serving of vegies every day. Either of those have about 3-5 carbs. You will also get some carbs from the cheese and from your fiber cereal (which I would be very careful with), and you shouldn't go over 20 a day (subtract the fiber from the carb count on the cereal and vegies). The lowest carb vegies are broccoli, cauliflower, asparagus, egg plant, cucumber, greens. Squash, peppers, and green beans are a little higher, but still okay.
