Psyllium Pizza Crust
3/4 cup combination soy and oat flours.. reserving small amount of oat flour to flour board with
2 T psyllium
1 T oil
1 T baking powder (3 to 6 g C, depending on the brand)
1/4 t salt
2 T soy protein (0 C)
3/4 C unflavored seltzer water, at room temperature
Put flours, psyllium, baking powder, and salt into a bowl; add seltzer and oil and mix thoroughly. Let the dough stand for about 10 minutes, giving the psyllium time to expand. Add ~ 2 T soy protein, the batter will be somewhat sticky, but firm enough to hold its shape. Lightly flour a board and roll out to desired thickness...I like a thin and crispy crust so I roll it out to a thin thickness...Place into a greased pizza pan. Add you favorite toppings and bake in a 425 degree oven for 20 minutes....
This is an approximation of the carb count for crust.. the combination of the soy and oat flours would be around 36 carbs; psyllium would be around 4 carbs...baking powder...the kind I have here is 3 carbs and the rest of the ingredients have no carbs so let's add this up:
43 carbs divided by 12 small pieces of pizza would average about 3.6 carbs for the crust...
43 carbs divided by 8 medium pices of pizza would be 5.7 carbs for the crust....
I have been using this recipe for about three years now and it makes for a great pizza crust...just remember to adjust ingredients so that you have a workable dough the consistency of pizza dough....Bonnie
