Default Damn that Atkins Company! Muffin Mix

Anyone know where I can still order the old Atkins Blueberry Muffin mix? They discontinued it for the deluxe version which now has a whopping 8 grams per muffin! ack

It figures the one low carb product I actually enjoyed is now gone.

I don't know if you are willing but I make these AWESOME muffins which are like 3 carbs each:

Zucchini Nut Muffins

1 scant cup Atkins Bake Mix
1 scant cup finely ground pecans (but can use almonds to substitute)
1 scant cup granular sugar substitute
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup canola oil
4 eggs
1 medium zucchini, coarsely grated
1 teaspoon vanilla extract

1. Heat oven to 350º F. Grease muffin pans.

2. In a large bowl whisk together Bake Mix, ground almonds, sugar substitute, cinnamon, salt, baking soda, and baking powder. In a medium bowl, mix vegetable oil, eggs, zucchini, and vanilla extract.

3. Pour zucchini mixture into bake mix mixture. Mix well. Pour batter into prepared pans. Makes 12 - Bake approx. 15 minutes until a toothpick inserted in center comes out clean.

Cool on wire rack before removing from the pan.

Hi Jim... to be honest I was scared to do much cooking myself. But if you have all the ingredients... I swear it takes under 5 minutes to mix it and put it in the tins!!

I'm with you... part of the appeal of these muffins is the lack of work! I frantically ordered some banana nut muffin mix online when I heard this a few weeks ago. I just hope they send me the OLD kind.

You can try adding some Flaxseed meal to any such recipe to increase the fat / decrease the net carbs per muffin.

You might want to try going to your local GNC & buying whatever they have left in stock. The GNC's around here have the plain old style muffin mixes. Good luck with you search.

Have you tried ordering from netrition.com? They may still have some of the older version left. Or GNC stores may still have some on the shelves...

Netrition is outta business for old muffins, unfortunately. I tried VitaminShoppe.com, but it looks like they may have switched over to the new kinds now. Maaaaan.

Grrrrrrrrrrrrrrrrrr...I hate this. I really liked the old muffins. I think I have 3 boxes in the cupboard and that's it. Damnation!

Is the alternative the already baked versions they are selling?

sell me one of your boxes! lol

the alternative is the DEXLUXE muffins with a whopping 8 grams of net carbs per muffin. they are the same size but almost triple the carbs and they cost alot more.. some alternative eh?

I just read your post about the new muffin mix in the LC products section, jplush76. I guess I'll have to savor these last ones...
