HI....although it's not as high in protein as bacon and eggs...sometimes on workdays, I have a low carb muffin.... If I do that I try and have some protein at morning coffee break, i.e. cheese. There's a few recipes for muffins in the recipe section.

Have you tried a protein shake??

Default Baked Breakfast Custard

Hi and welcome

Do you like old-fashioned baked custard? My grandmother used to make it. Here's a breakfast recipe I adapted from that memory.
1/2 cup whipping cream
1/4 cup whey protein powder
1/2 teaspoon stevia
1 1/2 cups soy milk
1 2/3 cups cottage cheese
1/8 teaspoon salt
3 eggs, beaten
1 tsp vanilla
1/8 teaspoon nutmeg
1/4 teaspoon cinnamon

Combine milk, protein powder, stevia and soy milk. Add eggs and beat well. Place five custard bowls in one inch of water in a baking pan. Spoon 1/3 cup cottage cheese into each bowl. Pour in the liquid mixture, dividing evenly. Give each bowl a stir. Bake at 300 in the pan of water for one hour.

protein 17.6 g
carbohydrates 4.6 g
fibre 1 g
effective carbohydrates 3.6 g

If you use soy milk instead of the whipping cream
protein 17.8 g fibre 1.3 g
carbohydrates 4.4 g effective carbohydrates 3.1 g

You can make this as a dessert by leaving out the cottage cheese. Use four bowls instead of five.

Have you checked the recipes in this site? There is a button at the top where you found the forum button. Also, if you follow the links, you will find more recipes.

Good luck!

Hi cheraismom,

What about leftovers!

Cold chicken, steak, a salad, canned tuna or salmon. It may seem odd at first but it's quite refreshing to have a salad for breakfast. I sometimes eat a can of salmon right out of the can. No dishes to wash.

Crab salad is fine as long as it's not fake crab. Three ounces has 8.5 grams of carbs!!!

Just make sure that you count the carbs in all the ingredients that you put in the salad. Three ounces of Dungeness crab meat has .8 grams of carbs. Have it for breakfast!

Karen

Default Great Recipe Kay

Kay,

That custard sounds great! Why dont you post it in the recipe section so it will be there for quick reference. It is sad to see all these good recipes get lost in so many threads.

Kay - Dessert Baked Custard sounds like another winner. You're a Godsend!

Ah, shucks . . . Thanks.

By the way, did you know that if you click on the button at the top that says Karen, you will find a whole collection of Karen's gourmet recipes? (The cream cheese macaroons are there. I wondered where they got to.)

Karen, I had the same thought, so I did post it in the breakfast section.
