Smile Birthday Cake?

My husband's birthday is Sunday - Aug. 31. We both started induction almost 3 weeks ago. We've each lost about 10 pounds and feel like we're progressing toward our goals. Is there a recipe for an angel food cake with chocolate icing that we can have? We don't want to fall off the wagon.

I stay away from it but I bet you could find something suitable under the "Sweet Treats" section of the Kitchen forums. Rumor has it there's a passable chocolate brownie recipe, but I refuse to go look.

I don't know about angel food cake, but aside from the recipes under "sweet treats", another recipe source I like is lowcarbluxury.com

In the Joy of Cooking there is a recipe for indivual molten chocolate cakes. They are flourless. I make them using Carbolite dark chocolate bars instead of the bittersweet chocolate and either splenda or malitol crystals instead of the sugar and serve them with whipped cream. I figure each (cupcake sized) cake has in the ballpark of 4 carbs and they are yummy! I used to make them with the original recipe pre LC and my husband (not LC-ing with me) can't tell the difference between the old version and the new sugar free ones. Yummy!

Probably the simplest thing to do is go buy a box of Atkins chocy muffins or naner nut ones and enjoy those. Years ago on Atkins, I simply chose to go to an expensive Seafood house and eat lobster, shrimp and crab legs for my Bday splurge

there are some great cheese cake recipes out there, the one for Linda's cheescake is very good! My birthday was also about 3 weeks in and I opted not to have cake. I got lobster and my husband put a candle in it.

I don't know what angel cake is but I'll give you a recipe for instant chocolate cake which you could make into a birthday cake.

Dry ingredients:

75g ground almond (almond flour)
75g dessicated coco nut
75g soy isolate powder (or soya flour, or increase the almond flour)
2 large dessert spoons of cocoa powder
1 heaped teaspoonful of baking soda
2 heaped dessert spoons powdered sweetener (I used splenda)

Wet ingredients:
four medium eggs
40g melted butter
about two dessert spoons of cream (add more if mixture is too dry)

Mix all the wet ingredients
add the dry ingredients and mix until it's a thick paste
turn it into a plastic sandwich box or other container and nuke it for about two and a half minutes. If it's wet give it another minute.

I made about six small cakes with the above mix. There is no reason you shouldn't make one big one.

You could cut it in half and add cream and dibetic jam (USA jelly) or dribble melted s/f chocolate over it.

The whole thing is about 7g carbs (or less) per 100g mix.

Have you ever tried Atkins brownies!! Fantastic and how about some SF ice cream to make an ala mode.

Either way... if you are going to go carb crazy - try to keep the calories down that day. That way you have only gained water weight that will leave in a few days.

Thanks everyone. I think I'm going to make a cheesecake. Maybe the chocolate decadence. Our son and his wife are also on Atkins. We talked about it and decided that that was the best plan. We are having steak and salad so we should be pretty safe. Hopefully not too many carbs. I'm going to look in Joy of Cooking for molten cakes for another time.
