I am having fun cooking from my garden right now! Invest in a low carb cook book. There are several good ones out there. Take your old recipies and make them low carb. Tommarrow night I am make my kids favorite - stuffed zuccinie. Leave out the bread and add a little extra cheese. I think that will work.

Good Luck and Have Fun!!!

I think I'm in my 9th week, still on Induction, and believe me...I hear ya! But, there is a solution...try some new recipes! Go to the recipe section of this site and there are some wonderful recipes that make mealtime a treat. May I suggest the Deep Dish Pizza Quiche, for instance. It tastes exactly like pizza to me and you can make it with so many different toppings and sauces (alfredo vs tomato). Also, buffalo wings, grilled hamburgers, and pork rind-coated fried chicken or fish have been a real treat for me as well. I never would have eaten those dishes before Atkins. So try something new and enjoy! Good luck!

Default Recipes, recipes, recipes!

I never used to be a very creative cook, but now I have a huge selection of recipes I've found online and my husband has commented that I'm sure turning into a gourmet chef!! LOL, and it's all low carb stuff! Believe it! Utilize the helpful suggestions of this forum's members on the recipe pages and do other searches on the web and there are TONS on Atkins.com. And it's BBQ season, get out those spices and start grilling. BBQ is one of my favourite ways to cook (maybe it's because I make my husband do the actual cooking!)

There are lots of "goodies" recipes too (yummm, those peanut butter cups) but I really have to steer clear of making too many "goodies" even if they're low carb because I think it's been holding me back. I'm going to really try to do a CLEAN, natural foods week and we'll see how it goes.

Good luck and don't lose hope!

Lily

I've been low carbing for three years now...and I still manage to do experimental cooking and come up with new recipes.

My two latest are chocolate chip cookies and carrot cake. You can learn loads from the recipe section on this site.

I am also on the induction on week 7 and creativity is what keeps me going. I bought a couple of low carb cookbooks and there are alot of great recipes in them and I have been having fun experimenting.

Default still on induction? Wow!

Does that mean you've gone all this time without one slice of bread... even super-duper high fiber?

How would you like to have breaded pork chops with a tasty mushroom sauce...I did, last week. How 'bout BBQ ribs or awesome pan-fried chicken? I've had all these, and more, during the last couple of weeks...and have never once reached 20 carbs in a day!

Trout almondine, shrimp scampi, and pepper-beef stir-fry. How many of these things have you had since you completed Induction? How about bacon-mushroom-swiss burgers on revolution rolls? Or chicken cordon bleu, lamb kabobs, pot roast and gravy...or even french toast slathered with butter and syrup? I've eaten every one of these dishes in the last few weeks, and there isn't one that I wouldn't have again tomorrow. And none of these has been a "cheat".

Each of these recipes was posted on the web, many on this site. We've found dozens of others that we haven't even gotten to yet. This way of eating doesn't have to involve sacrifice, just a willingness to discover some new favorite dishes with low-carb ingredients. I'm looking forward to experimenting with eggs benedict this weekend, using rev rolls instead of english muffins and a lc hollandaise sauce. If that works out, we may even shoot for eggs florentine the following weekend!

You don't need to be a creative chef to eat well on Atkins...you just need to follow the recipes that the trailblazers on this site (and others) have developed. There are terrific choices in appetizers, soups, salads, entrees, side-dishes and desserts, all kitchen-tested and waiting for your discovery.

Don't let a restricted menu drive you away from lc foods. Many of these recipes are easy to make (despite the grand names), and very tasty to boot. We've had guests over for dinner a couple of times since we started the Atkins program, and they've never realized they were eating a low-carb meal at our table! Just because it's healthy eating doesn't mean you have to settle for boring meals.

I'm on my third week too. I try out at least 3 recipes a week.right now i'm making new sald dressings, paring them with different cheese and lettuces. For me boredom sets in when I eat the same basic foods every week so I try to vary it. Fish, crab, turkey, eggs, new veggies, new soup recipes. I started right here in the recipe section and have branched out to other sites and collections on the web. Thr breadth of food we CAN eat is startling.

If you like seafood, then you're in good shape! Broil shrimp and scallops in butter and garlic- or make clams casino! Also, you can make your own chinese dishes at home..what about Kung Pao chicken? Find a low sodium soy sauce, thinly sliced up chicken, green and red peppers, a little bit of onion, and some peanuts. Also, don't underestimate the wonderfulness of a crockpot..throw in a chicken or some ribs with low carb BBQ sauce..YAY! Good luck!

Remember, too, that Dr. Atkins says if you are bored with induction, move on to OWL. It's suggested that you stick with the same foods but increase them slightly. I am instead trying to stick around 20 g but switching out the carbs in eggs for the carbs in whole milk yogurt with a little lc fruit jam in it or a couple of nuts or strawberries instead of a chunk of cheese. Just a couple of little changes but it has made me much happier. Maybe I won't lose quite as fast as if I stayed on the induction diet but I am more content and less likely to cheat.

Laurie

Yah, I am staying under 20 carbs a day, but adding some other things in.... like last night... fried chicken and mashed faux-tatoes. We used soy flour and parmesan with a few spices for the breading and deep fried the chicken... it was fantastic! I used the recipe I got on this website for faux mashed potatoes using cauliflower and goat cheese... it was fantastic!

Hmmm... I brought the left-overs today.... I think it's lunch time!
