Default coconut question

I have two different brands and types of coconut.

The first is unsweetened medium coconut. It has 90 cals, 9g fat, 3.5g of carbs with 2g of fiber.

The second kind is coconut flakes, unsweetened. It has 120 cals, 11g fat, 4g of carbs with 0 fiber.

My question is are there different kinds of coconut, are there different processed which could rob coconut of fiber? I can understand the concept of hidden carbs and that they may not list all the carbs, but it doesn't make sense they wouldn't list all the fiber. Both have 3 Tbsp as the recomended serving.

are the serving sizes the same? did you check the ingredients to see if there is something added to either one that might account for the difference?

I'm stumped. If I were looking at these two products, I'd call the toll-free customer service number on the label of the zero-fiber product (assuming it's listed), and ask them this question.

One lists ingredients as just coconut. The other doesn't list ingredients, but has "whole natural" printed all over it so I think the flaked coconut is the ingredient. They don't have a number on the package, but they do have an email address. I'll have to email them after the move and ask

Acohn - My coconut oil finaly got here. It is so nummy I have to be careful not to eat too much I notice though that it feels a lot more greasy then other oils. It also has shot my saturated fat percentage through the roof. I'm not to worried about that yet, maybe when I get on maintanance though I'll make sure to cut back

LadyBelle,

I'm glad you find the coconut oil tasty. To reassure you, half the fat in that oil is lauric acid, which the body converts to monolaurin, an anti-fungal, anti-microbial agent. Much of the rest of the oil is MCTs (Medium Chain Triglycerides), which the body uses for immediate energy production, so it's unlikely to be stored as body fat.

If you're interested, The Weston A. Price Foundation has an interesting material on the roles of saturated fats in the body (it's about halfway down the page, under the heading "The benefits of saturated fats"). This information helped me get over my fear of saturated fats.
