a better salad
as so many have pointed out on this forum, eating low carb veggies is important. romaine lettuce is among the lowest in carbs and is a great base for a fabulous fresh salad. alas, many folks seem to dislike salads and I think this is easy to fix just by preparing the salad in a different way. For some reason, salad ingredients are usually large. wrong!!!
Instead, cut hearts of romaine lettuce as thinly as possible. Slice green onions, mushrooms, etc very thin. Add a few thinly sliced tomatoes.
I learned this technique from a friend who lived in Isreal where salad is a breakfast item. Use as many finely shredded veggies as possible and dress them with olive oil, a small dash of vinegar and salt and pepper. No need to use a commercial dressing which may or may not have added sugars.
I think that because the veggies are so thinly sliced, they contribute juices to the dressing to make a fab salad. I've made my salad this way for years and always get rave reviews, even from those folks who generaly don't care for salad.
