Default what is everyone making for Thanksgiving??

Hello everyone

Just wondering what ideas you have for Thanksgiving dinner??

I'm making wildrice, mushroom and sausage stuffing with pine nuts, pumpkin chiffon pie, homeaide cranberry sauce, and mashed cauliflower, in addition to the turkey.

I'm interested to know what others are cooking to see if I can steal any ideas...

I am also cooking a Turkey, with lots of gravy and cauliflower, etc. Similar to your menu.

I had someone make the Vancouver low/no carb cheesecake yesterday and if it had turned out I was considering making one of those but I found it way too sweet with an awful after-taste. It is too bad too as I am sure it was a lot of work and cost a bundle to make. So I am now going to explore some other desert to make. I have a ton of recipes to go through.

I make pumpkin pie all the time. I use a pecan crust, and splenda for a sweetener. It's not too sweet...

I was thinking about trying the Pumpking Chiffon Pie that is on this site. I don't actually like Pumkin Pie so I am debating whether to use my guests as guneau pigs for the low carb recipe or to just make them a 'normal' pumkin pie.

Jennifer I forgot to say I make a dynamtie pumpkin cheese cake. I use pumpkin (small can) splenda, pumpkin pie spice, and a pecan crust. It's to die for!

i am making a mixed green salad, turkey (no stuffing)
broccolli and cauliflower with LC cheese sauce and
mashed turnip and rutabaga with lots of butter.
sparkling water in place of wine. it will be just my 16 yr
old GD and me this year.
we are looking forward to it

It looks like you are doing great and have lost a lot of weight!

Too funny, didn't even realize that I was 'talking' to Yukoners...

I'm one of these cooks that throws things in, so my 'recipe' is just 3 pks of cream cheese, one small can of pumpking (hee hee) splenda to taste, 1 tb of pumpkin pie spice, (approx) and two eggs.

Beat together and make a crust out of 1/4 cup butter, cinnamen, and 2 cups pecans chopped in a food processer.

I bake around 50 minutes...

Sometimes I use a little bit (1/4 cup) of fructose and some splenda. The fructose adds carbs but it's low glycemic. The texture and taste turns out better...I get the fructose from 3 bean, on a shelf under the tea/coffee on the back wall.

Off to bike the Ibex valley trail. Have to make up for the dinner at the Cellar on Firday night. I was sooo hungry, and gobbled down two rolls, duh! I should have know better. I also should have known that I can't drink like I used to before LC, and spent the better part of yesterday feeling sorry for myself. Today that bathing suit in Mexico this Christmas is front and center. I can do it, I can do it! Can't I?

Default LC cheese sauce

Jesdorka, how do you make your LC cheese sauce? I've ordered Thick in Thin LC thickener, but it's not here yet.

I might make brocolli casserole - chopped, blanched broccolli, slivered almonds, onion, garlic, cream of mushroom soup and cheese wiz. It tastes much better than it sounds! Our three teenagers love it :

I might do as you're doing and mix rutabaga with turnip...

I am going to my friend's place for Thanksgiving..I am making a lc pumpkin cheesecake and some mock mashed potatoes, so that I have something to eat besides turkey....can't wait to try the cheesecake!

maggie
i found this recipe here on this board but i can't recall
who to give credit to.

all measurements are approximate, you kinda have to find what
works for you.

2c whipping cream (35% BF)
3 tbsp cream cheese (plain or flavoured garlic etc)
1-2 c grated cheese (your choice of cheese)

simmer cream 5 mins or so until it becomes thick and
gloppy.
stir in cream cheese until well mixed
then stir in grated cheese until well mixed.

that's really all there is to it. it just takes practice and
possibley some adjustment of ingredients to get it to the
consistency you prefer. what i have found works best is
making it the day before and re heating it in the
microwave when i need it.
