Default Tired of eggs??

I'm about a month or so into induction and I'm getting sick of eggs. Scrambled eggs, poached eggs, hard-boiled eggs. Blah! I wanted to try something different, so I went through some recipes I had printed out from posts. Aha! I found the Scrambled Eggs Muffin recipe and made it tonight. Yes it has eggs, but the variation is great. It was YUMMY! Just what I needed.

I have not tired of eggs as of yet. When I do I will be sure to try this recipe! Thanks for letting us know it was good.

As much as I love eggs, I do try to vary our breakfast menu. After exhausting the possibilities of scrambled, scrambled with peppers and onions, scrambled with chourico, omelets, and mock danish, I realized that there are plenty of other things to eat for breakfast. I buy 1/4" thick steaks or thin slices of pork; these cook quickly and taste great, especially with a small broiled tomato (not good for induction, but ok after that).

Once in awhile my husband requests fish for breakfast, so I buy a piece of sole or tilapia. He loves it, but I can't go that far, even though I do like smoked salmon rolled around cream cheese or in an omelet for breakfast.

Oh, and I have made mushrooms stuffed with cream cheese and sausage; they are delicious and I think I found the recipe in the breakfast recipe section here.

And in DANDR, Atkins says you can eat any kind of protein for breakfast, so the possibilities are as endless as for any other meal.

Zora : What/where is this "scrambled eggs muffin" you speak of? I tried searching on it but got HUNDREDS of hits (cos of the "scrambled egg" part.. Can you point me in the right direction or post the recipe? Thanks!

No, the ones I made are called Scrambled Egg Muffins and the recipe doesn't use heavy cream, Atkins Bake Mix or Soy Flour . It's eggs, onions, green pepper, sausage, shredded cheddar cheese, salt, pepper and garlic powder. When I get home from work, I will post the recipe. I can't recall the measurements. It's dee-lish!

Ok here is the recipe. I think it was on this forum that I found it. It was posted by Tara on 10/31/99 (before my time) LOL

Scrambled Egg Muffins

1/2 lb. bulk sausage
12 eggs
1/2 c. chopped onion
1/4 c. chopped green pepper
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/2 c. shredded cheddar cheese

In a skillet, brown the sausage. Drain. In a bowl, beat the eggs. Add onion, green pepper, salt, pepper, and garlic powder. Stir in sausage and cheese. Spoon by 1/3 cupfuls into greased muffin cups. Bake at 350 degrees for 20-25 minutes or until a knife inserted near the center comes out clean. Yields: 1 dozen. Approx. 1.5 carbs per "muffin."

These sound very good. Do you know if these "muffins" freeze well?

Lately I have been having various flax muffins for breaky. I was getting a bit tired of eggs and muffins are very convenient to take to work.

I am not sure if they freeze well, I haven't tried to do that.
They are very good though. I made them last night and took one to work today, popped it in the microwave and mmmmm... yummy!!

It seems like there are many muffin cup egg things.
Some have cream or water, some add flour (soy or low carb bake mix) and add the meat or other low carb veggies to taste.

I think they all work well and can make a great make ahead of time meal.

you make 12 "muffins" at a time and 2 or 3 make a meal.

They stay good in the fridge or freezer, and reheat well.

Just my own thoughts.
