Lactose Free yogurt?
Ok I know that when you make yogurt, the lactose is eaten and converted to lactic acid and soemthing else (gluclose?)
Anyway, I know you canmake soy milk yogurt. Soy milk has no lactose, so what do the cultures eat?
Can I use my lactose free milk (regular milk with a lactose eating enzyme added, 11g net carbs) to make yogurt? Also could I make soy slender yogurt?
ATM I have been using goat's milk, but it has a strong taste. On it's own it's good, but I am looking for a milder yogurt for mixing with things. Also it has to be good for the baby (If I make soy milk y ogurt she will get regular whole milk or goat's milk). The carb countdown milk has made amazing yogurt, but I am trying to get to more whole natural foods.
