Default Thanksgiving Side Dishes

I have some relatives from Germany coming in two weeks. We will deep fry a turkey - something that will be new to them. What are some tasty side dishes that I can serve with it - that a low carb dieter can eat as well? I've looked in books, and I haven't tried any. They will be here soon. Please help!

Look at the Atkins web site, he has a whole section devoted to holiday menus. For dessert he has a pumpkin pie with a pecan crust that I am dying to try.

For appitizers/ premeal snacks-
Veggie plate with ranch dip
cheese crackers
nuts (in shell with nut cracker)
celery with natural peanut butter or creamcheese mixed with scalloins
deviled eggs

For side dishes-
Green beans
Cauliflower "Mock" mashed potatoes, or turnip potatos
creamed spinich
grilled or roasted zucchini
Gravey made from LC thickner (Xanthum gum, can be bought online as thick and thin or some name like that)
Stuffing made from a mix of nuts or LC bread crumbs (hazlenut or pine nuts, yumm)
Side salad (if they are from germany they may be accustomed to a small salad with meals anyway)


Depending on phase of diet, maybe some sweet potatoes thinned with pumpkin or other "filler." If you can get the toasted marshmallow flavored DaVincci you can maybe fake that marshmellow/yam bake, throw in a little SF maple syrup.

Desserts
The pumpkin pie with pecan crust
crustless cheesecake
Mock apple crisp made with zucchini

I just saw a bag of Thick-n-Thin at my local health food store last night....for $20.00. Now, granted, that goes a long way but I've found that guar gum works just as well and costs about 1/4th as much. You only need a teaspoon to thicken 1 cup of liquid, so it goes a long way too. One container usually lasts me several months.

Some more appetizer ideas:

Bacon wrapped shrimp or scallops
Ham or dried beef slices spread with cream cheese and wrapped around green onions or dill pickles
A cheese and sausage sampler plate (German if you can find them )
Hot wings with celery and bleu cheese dressing for dipping
Meatballs with a couple of different dipping sauces
Mini cheese balls rolled in pecans (serve with toothpicks)


You can make a lowER carb cranberry sauce with sugar-free jello and Splenda.

you must have saurkraut and its very low in carbs, my husbands family is from germany and we have saurkraut at all holidays with turkey. we always have a relish tray and spinach dip also. good luck

Thick-n-Thin is just Xanthum gum. You maybe able to buy that instead of name brand and save some. Probably depends on how good the health stores are where you're at. Here they stink. I am going nuts wanting to go to Ft. Collins or Denver and see if they are any better.

I did buy the name brand online as one of my earlier LC purchases. I think I've used it once in the past 4 months, so it does stick around forever.
