Hi Dave. Just in case you don't know how to "open" one - Cut around longwise with a sharp knife. Sort of twist the 2 halves gently. Remove the seed. You can scoop the pulp out with a spoon OR cut into slices or cubes. They are great sliced and eaten in a salad, with Chicken Salad, with just about anything. You can smush it in a bowl with a little salsa and eat with pork rinds too.
