Too funny, didn't even realize that I was 'talking' to Yukoners...
I'm one of these cooks that throws things in, so my 'recipe' is just 3 pks of cream cheese, one small can of pumpking (hee hee) splenda to taste, 1 tb of pumpkin pie spice, (approx) and two eggs.
Beat together and make a crust out of 1/4 cup butter, cinnamen, and 2 cups pecans chopped in a food processer.
I bake around 50 minutes...
Sometimes I use a little bit (1/4 cup) of fructose and some splenda. The fructose adds carbs but it's low glycemic. The texture and taste turns out better...I get the fructose from 3 bean, on a shelf under the tea/coffee on the back wall.
Off to bike the Ibex valley trail. Have to make up for the dinner at the Cellar on Firday night. I was sooo hungry, and gobbled down two rolls, duh! I should have know better. I also should have known that I can't drink like I used to before LC, and spent the better part of yesterday feeling sorry for myself. Today that bathing suit in Mexico this Christmas is front and center. I can do it, I can do it! Can't I?
