DH and I stayed at the Holiday Inn Express at Exit 4 off I-24 in Paducah, Kentucky, this past Friday. They offered a free continental breakfast for guests, just as so many hotels do these days, but they were special. Instead of being just the carb-laden fare of sweet rolls, bagels, toast, muffins, cereal, milk and juice, they also offered peeled boiled eggs! And they had packets of Splenda for the coffee, not just the pink and blue stuff!
So, instead of having just coffee with blue stuff and watching while DH ate, I got to have two boiled eggs, cream cheese and coffee with Splenda.
I thanked the manager for thinking of low-carbers when preparing the menu for the breakfast bar. He informed me that the boiled eggs were becoming the Holiday Inn Express standard for breakfast because they realize that so many folks are now eating low-carb.
And that the Splenda was added at the suggestion of several of his employees that are LC'ers.
YMMV so it would probably be wise to call ahead and make sure your destination Holiday Inn Express has boiled eggs, too. Hope this helps folks make decisions when traveling and worried about what's for breakfast.
