Yummy cauliflower salad
I'm sure that someone has posted a similar recipe, but here's my version of the mock potato salad.
1 head cauliflower
chopped onion
chopped celery
chopped green pepper
chopped mushroom
5 hard boiled eggs
mayo
mustard
salt
pepper
Steam cauliflower, not too long....just right. Drain well. Cut into pieces.
add other ingredients. I did not measure any of the ingredients that I used. Just some of this, some of that. Added just enuf mayo to moisten.
This was an excellent salad. Way better than that ol' fashioned potato salad. Not near as heavy. It also tsted just like potato salad, so obviously the potatoes are not what give it it's flavor. And the crunchy veggies in it were excellent. Could add some cucumber to it but since I didn't have one in the fridge I'll have to wait til next time.
I added up all the carbs for this salad. Total was 32. I divided by 10, cuz it was about 10 sevings. So 3.2 per serving.
