Red Thai Pork
As I'm from the UK I was a bit worried about posting this as I wasn't sure if everyone would be able to find the ingredients. But then I thought, why not post it anyway!
Approx 300g Strips of Pork (suitable for stir frying)
Red Thai Curry Paste
Fine Green Beans
Soured Cream
Stir fry the pork in olive oil, when browned, add the fine green beans (I used fresh, because the frozen ones tend to go soggy). Add a couple of teaspoons of Red Thai Curry Paste (or more if your mouth can stand it, lol). Cook for a further 5-10 mins. Turn the heat right down and add a dollop of sour cream. Give it a good stir and voila....
Red Thai Curry Paste is approx 8.5g carbs per 100g - but you would use much, much less than this - I used 20g, which is 1.7g carbs.
Soured cream - 0.8g carb per 20ml
Green beans - 3g carb per 100g - I used 50g
This is something which is so quick and easy and you could also make it as Green Thai Pork - substitute Red Thai Paste with Green Thai paste and add some coconut cream along with the soured cream. Also good with chicken!
