Question help with meatloaf

I've looked around at some of the meatloaf recipes but can't really find what i'm looking for. What i'm looking for is a really simple meatloaf recipe. Ground beef, eggs, celery, parmasan and tomato sauce. I have all this stuff on hand, if i don't add in anything else, do you think it would be to much liquid. How would you figure the carbs up per serving.


If anyone knows of any really simple meatloaf recipes (preferably 8 ingredients or less) please let me know, Thanks.


I did find some frozen meatloaf patties with gravy, that have 10 g of carb per patty, but 6 gram of fiber, for 4 net carbs.

You could add some diced onions and/or mushrooms also.
Your ingredients sound fine to me, just don't use too much tomato sauce. The eggs will be the binder, too much sauce will make it too loose.

I recently made a lc meatloaf using approximatly equal amounts of beef, pork and turkey. Added eggs, onions celery, thyme, and garlic. It was flavorful, but not tender enough. I think we lc'rs need additional fat to offset the lack of breadcrumbs or other starch. So here's what I'm going to try next time.

1 lb ground beef
1 lb ground pork
1/2 lb ground turkey
4 sweet italian or other raw sausages, removed from casing or equivalent amount of ground bacon (1 cup?)
3 whole eggs
1 teaspoon dried thyme
1/2 cup finely chopped celery
1/2 cup finely chopped onion
2 teaspoons garlic powder
1 tablespoon dried basil
1 teaspoon pepper
2 teaspoons salt

Make sure all ingredients are at room temp so you can mix up by hand without getting frostbite (forgot last time). This should make 2 loaf pans.

Thanks for your help-It's meatloaf tonight. Just have to figure out what side to have. Normally have potatoes, and haven't fixed meatloaf since starting this WOE.
