Default Trouble with using Bake Mix as a coating

Every time I have used Atkins Bake Mix as a coating to fry something, it has foamed like crazy in the skillet. I have used it by itself and in a combo with Parm cheese and both times it has foamed. Using just the Parm cheese doesn't cause the foaming. Leading me to believe that it is the Bake Mix.
Has anyone else had this problem? I see so many posts about using it as a coating that I can't believe they would use it if it does what mine does.

Maybe its the baking powder or whatever that is making it foam. Maybe mixing it with liquid to make a batter first before using it as a coating would work. I don't know, just speculating. I've never tried it. I am still trying to figure out how to make the cranberry muffins from the baking mix without putting real eggs in it.
