Although I tend to throw things together rather than provide official recipes, here are some ideas for salads:
BLT Salad : romaine lettuce, a few plum tomatoes, crispy bacon, fresh ground pepper. The dressing is simply several tablespoons of good quality mayonaise thined with some of the juice/seeds of the tomatoes.
Even with 3 plum tomatoes, the carbs didn't add up to much on fitday--------

Cobb Salad : mixed leaf lettuce, chunks of chicken, crispy bacon, hard boiled egg, avocado, spring onion, ranch or blue cheese dressing (see dressing thread for recipe)
Chef Salad: mixed leaf lettuce, ham, cheeses, turkey or chicked breast, boiled egg, onion, cucumber, sliced mushrooms, radishes, dressing of choice
Spinach Salad: baby spinach leaves, emmental/swiss cheese, crispy bacon, hard boiled egg, sliced mushrooms, walnuts, rings of purple onion, dressing (olive oil, balsamic vinegar, dijon mustard, walnut oil, fresh ground pepper)
Greek Salad: romaine lettuce, black olives, feta cheese, green bell pepper, tomato, flat leaf parsley, spring or purple onion, cucumber, greek dressing (olive oil, lemon juice, garlic, oregano, fresh ground pepper)
Oriental Salmon Salad: mixed leaf lettuce, red bell pepper, spring onion, cucumber, mung bean sprouts, slivers of daikon radish, poached or grilled salmon, flat leaf parsley, toasted sesame seeds, dressing (olive oil, sesame oil, grated onion, tamari/soy sauce)
Salade Niçiose: mixed leaf lettuce, oil packed tuna, steamed green beans, hard boiled egg, cucumbers, tomato, whole anchovies, dressing (olive oil, whole-grain dijon mustard, balsamic vinegar)
Asparagus Salad : steam asparagus, marinate in olive oil and balsamic vinegar. Top with fresh ground pepper and shallots. Serve warm, room temp, or cold.
