Crockpot BBQ Beef
I made this for a family reunion yesterday and it all disappeared so everyone must have liked it. I adapted an old recipe that called for barbeque sauce and ketchup and brown sugar. I don't measure anything so you may want to adjust amounts to your liking.
CROCKPOT BBQ BEEF
4 slices bacon
1/2 onion, chopped
1 can tomato sauce
1 small can tomato paste
1 Tbsp. vinegar
1 Tbsp. worchestershire sauce
2 Tbsp. brown Sugar Twin
1 Tbsp. chili powder
1/4 green pepper, diced
1/4 red pepper, diced
3/4 cup celery, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
1/4 tsp. cloves
1/4 tsp. cinnamon
1 cup water
1 tsp. liquid smoke
3 to 4 lb. beef roast
Chop bacon and fry. Add onion to bacon and saute until translucent. Mix together all sauce ingredients in crockpot. Add trimmed roast. Cook 10 hours on low. Remove roast, shred and add back to sauce. Cook another hour.
Per 1/2 cup serving: Calories 153, Fat 5.5g, Sodium 223mg, Carbs 3g, Protein 21g.
