Thumbs up light, rich creamy cold cake! AMAZING. Induction level variation

I sort of posted this in the "two in one" post, but thought I would make a more interesting title.. this is so good I don't want anyone to miss it.

This not only looks appetizing and good enough for company but tastes heavenly.

First make "crepes." Just scramble water with an egg, then on a teflon pan which you've sprayed with a nonstick product pour some of the egg mixture and cover the pan in a VERY thin layer. Cook and flip so you have a golden brown eggy crepe. You can add flours if you like, but I keep it simple. Make4-10 of these depending on how high you want your cake to be, then put them in the fridge to cool

Make a whole bunch of whipped cream using heavy cream+vanilla, and depending on your tastes, either don't sweeten at all, or sweeten to taste with stevia or splenda. Put it in the fridge.

In the microwave (or counter) melt frozen mixed berries. You can really use any berry you like, sweeten these with your choice of sweetner.

Once everything is cold, take out the crepes and layer a layer of whipped cream and berries in between each one, you have to sort out for yourself how thick you want each layer to be.. I find I don't have to make it terribly think because there are so many of them.

Put a layer of whipped cream on the top then sprinkle with cinnamon, or garnish with berries.. Serve, or freeze and serve frozen.

Even non lowcarbers will swoon over this (if they have any taste


variations: make a chocolate mousse out of the whipped cream and omit the berries for an induction level dessert. Just use cocoa and sweetner.

Another induction idea would be to mix some (not too much!) crystal lite or something into the whipped cream for the fruity flavour without the berries.

put some cream cheese into the whipped cream for a different flavour
