I miss lots of things but what can you do?? I am trying to work with it. I did find a SUPER recipe in Dana Carpenders 500 Low Carb recipes book and it is for a Mock Potato Salad. Yes, it does use cauliflower but I LOVE this stuff! I make a big batch every single week and I'm eating a bowl right now! This is not the exact recipe but here is my version from memory. Actually I have added a few things to the recipe, like the pickles...
2 heads cauliflower
6 hard boiled eggs
2 cups chopped celery
1/4 of a chopped red onion
4-5 chopped sweet pickles (or dill if you are bothered by some extra carbs)
1/2 cup mayo
1/2 cup sour cream
tablespoon cider vinegar
2 tablespoons splenda
salt & pepper
You just cook the cauliflower about 10 minutes until soft but not mushy. Then run under cool water. Combine with chopped eggs, celery, onion and pickles. Then mix mayo, sour cream, vinegar, splenda and s&p and add to veggies. Mix well and chill. I swear this tastes just like potato salad!!!
