I went and looked up celery ROOT using a Google search. If you go, its the first link posted. Celery root looks like a cross between a brain and tree roots. Its round, yellow-ish with the tree 'roots' chopped off to make the ugly thing round.

Here's what else it says about these nasty looking creatures:
"Celery Root has a pungent celery-like flavor and is, in fact, a special variety of celery, developed by gardeners during the Renaissance. In recipes calling for cauliflower, fennel or cardoon, celery root makes an interesting and unexpected substitute if not a quantum improvement."

I think I'll pass for now. I don't remember ever seeing it anyway...

Celery root makes great "freedom fries". Peel cut into strips and deep fry.
Don't be afraid of these new unused vegies, many are great subs for high carb.

Danny-- bless ya for posting. But I just can't bring myself to buy these critters just yet. One day when I am dying for chips, I will give it a try. But that (hopefully) will be a long way off. I just can not get past thir ugly looks... lol

Smile Celery root

This is a different (but related) animal than celery. The root ball of the celery plant is a hard tuber that you can peel and cut into chunks. It is YUMMY when steamed and smothered in butter & a little salt/pepper. My mother used to fix it once in a while and I grew very fond of it. I see it in the produce section from time to time and I usually grab it whenever I do. It is also great in stews. The flavor is similar to celery, but a little different - a little earthier in a way.
