Congratuations of the weight loss and the decision to stay alive! I've been on the Atkins diet now for 10 days, and as of this morning I've lost 11-lbs. Water weight or not, I feel wonderful and wonderful about the loss. My pants are actually loose this morning WOW!!

I don't feel at all deprived by the Atkins. Last night my wife and I took my dad, who's 82 and in town from Scottsdale to celebrate Thanksgiving and my wife's birthday (tomorrow) with us. We went to one of the really good old Italian restaurants in Omaha - and I had prime rib end cut. As I told the waitress that I didn't want any salad, soup or side dishes, she had the kitchen cut me an extra large end cut..the damn thing probably weighed a pound! ... And I only finished about half of it with horse radish - I never ever ever used to leave food over ... and I told her to pack it to go (also a first for me ... usually when I'm finished there's nothing left salvagable on the table)..but with Atkins .. MY HUNGER SEEMS TO HAVE DISAPPATED!!

Even though I have a lot of weight to go ... I'd bet by November of 2003 it'll be gone. I'm going to make egg beaters and shredded Swiss cheese (I know I can eat regular eggs, but I've found egg beaters to taste great, and easier to make omlettes with (the only thing I'm having a hard time doing, it hard - boiling the egg beaters...LOL). Anyway, I put a little picante sauce on the omlette, and what a fab breakfast! I still have my one cup of regular coffee (with lactose free milk), my wife's lactose intollerant, and that the only milk we keep in the house. (Actually we have a half gallon of chocolate milk from when the grandkids were here last week...but the thought of chocolate milk in coffee is something I'm not going to try. (Does anyone know, is it better to use half and half rather than 2% even in small quantities like in coffee)?

Hey, Steve, nice to hear from you!

I wanted to mention just a couple of things. First, that salad would have been a good idea. We're permitted LOTS of fresh vegies. As long as you picked off the croutons, or requested their removal, the salad would have been a very healthy side with your steak. (Glad you enjoyed the steak, though!)

Also, there's a recipe online here (somewhere) for low-carb stuffing that's made with pork rinds. It sounds really good, so we're trying it for dinner tonight. (We have our celebration in the evening.)

Hi Steve!

Actually for coffee the best thing (and lowest in carbs) is whipping cream or heavy cream. Half and half would be the next best choice. Stay away from the powdered creamers as they have hydrogenated fats in them.
