Default Good morning

Good morning everyone. Carol, I am glad your made it. Linda, I found out if I have to report on my food intake it helps me stay on track better. I hope this is okay. Well got on scale this morning I am down one pound . That is one pound that I gained back gone. I have found out to stay away from pork rinds and nuts. They are a no no for me in this heat. I hope everyone have a great low carb day.

Default the recipe I promised......

Fellow No cheaters here is the recipe I talked about this morning.

BEEF AND PECAN SPREAD SERVES 10
1/2 cup pecans, unsalted-chopped
1 teaspoon butter
8 oz. chipped beef (we used the carl budding)
1 Tablespoon heavy cream
1/4 cup green pepper-chopped
1/2 teaspoon garlic powder
1/2 cup sour cream
8ozs. cream cheese
2 teaspoons onion flakes

Saute the pecans in butter until warm. Set aside. Cut the chipped beef into small pieces. Blend the remaining ingredients in a food processor.
Place mixture in a glass pie pan and sprinkle with pecans.

Bake at 350 degrees for 20 minutes or until bubbly.

Per serving:
2.5 grams Carbs.
0.3 grams fiber
159.4 calories
14.0 grams fat
7.0 grams protein

serve with celery or pork rinds, we did celery it was wonderful, but another thing would be cucumbers. As you can see the calorie count is high as well as the fat. hope ya'all enjoy. joan

Day 2, and NO cheating......yippeeee

Yesterday, had a wonderful recipe myself, Stuffed Venison steak. Stuffed with garlic, basil, and smoked gouda cheese, with dijon sauce over it. Melted in my mouth, just wonderful.

Today, had my protein shake made with cream and water, for lunch: turkey and chicken salad, dinner tonight will consist of a smoked turkey leg (not the whole thing) and tossed salad with blue cheese dressing.

Looking forward to a weight loss for the month of August......

Bye all,

Default Hi Carol.

So glad you could join us. Yes you can get chipped beef in the grocery, it comes in a 3 oz. pkg usually and in our store Kroger it is with the other prepackaged lunchmeats.
Congrats on the pound lost and I grew up on a farm, I know all too well about hauling in hay. Have a great evening.. joan

Default Thanks for the welcomes!

Hi all,

Made it through the day....no cheatin! Even went out for dinner and didn't have dessert.....wasn't even a problem...I am psyched for this challenge....does anyone have any specific goals in mind to lose by labor day? I am hoping to drop 8 lbs....might be a little unrealistic, but we will shoot for it!
Donnaj, we should tell LouiseV about this challenge, I bet she would be up for it!

Take care everyone....we can and will do this together!
Carol
