Unhappy need help with mashed potato craving, and what can i do with Ground beef

I am a huge mash potato fan, bening doing the atkins for 4 weeks now, I want to stay in the induction phase for awhile to get the lbs's down!

I am getting really tired of the meals, and would like to have some better side dishes.

As well I have been lucky to have gotten a whole bunch of Buffalo meat (very good, very lean, and tasty just like beef) you all should try it, anyhoo I have a ton of ground beef, is there some creative ideas out there???

HELP!

Default Potato subs

Woman's World this week has some great recipes for a LC WOE, including a recipe for turnip fries. I'm going to try those as a potato substitution. Also, try cooking come cauliflower and mashing it up with lots of butter and sour cream. Yum!

Hey,
Just one word.................califlower. Try the mashed with cream cheese or sour cream and butter, you can even throw some chives in and it taste petty close to a baked potato. Califlower also works great as a rice substitute.

Hey all thanks

I actually did the cauliflower last nigt
boiled it, mashed it very ruff, added butter, some sour cream, then riced it with a potato ricer

WOW O WOW!!!

the turnips sound way good as well.
I will perfect some of these recipies, it may take me awhile

Hi Nathan ---------The cauliflower fried rice is out of this world. I make a beef and broccli with fried rice and a sweet and sour sauce using sf syrups. SO SO SO good. I also make a ground bf. egg roll filling. beef , onions,chopped red pepper,bamboo shoots, and bean sprouts. brown bf in 1 tsp of sesame oil and 1 T. of canola oil, and cooked all together and 2 T. soy sauce and fried rice so good. I also would make a meatloaf. ESS

Making Mashed Fauxtatoes with a mix of turnip AND Cauliflower is realy good, too. I think it may be better than using either alone.

You'll find the recipe for "Cauliflied Rice" in Low Carb recipes on the orange bar at the top of the screen. It's one of Karen's.

Nater, I cook with ground beef or lamb regularly (although we call it "mince" ). Meatballs are good. I use often use Karen's feta and olive recipe (on the orange bar) or I just bind with an egg, and add a little onion, garlic and tomato.
I also make a "lasagne" using sliced eggplant or zucchini.
And I get rave reviews from my latest invention - mince & vegie pie. I grease a casserole dish well with butter. Then layer in vegies of your choice. I've used cabbage, Chinese cabbage, bok choy, zucchini, cauliflower, broccoli - and more. Meanwhile, fry the mince/ground buffalo with chopped onion and garlic, then add some canned tomatoes. Simmer until the the mixture is no longer "wet" and spread over the vegies. Sprinkle cheese over the top and into the oven - about 320-350ºF - for about 30 to 40 minutes.

Or you could try Tamarian's Inverted Shepherd's Pie.
