It's true you should measure pre-cooking, but the carbs don't change. Remember not overcook veggies, the longer they're cooked the more vitamins they lose. That doesn't mean not to cook them, just don't overcook. Like brocolli, leave it a little crisp to get its full benefits. I think they taste better too when they're not overly done & soggy.
