Default gravy??

i dont know what to use for gravy, we just eat it plain. But i know a great thickener is Guar Gum, it has no carbs, and doesnt have a taste of its own.

I know how to make LC sausage gravy, that might help, though I'venever written or measured it out. Just do it to taste.
I cook some country sausage and a small minced onion till they're done, then drain and discard most of the drippings, but keep like 2 TBS. Set the sausage aside.
In the same pan as the drippings, add a cup of heavy cream, some pepper and nutmeg (it sounds weird, but it works) and some notStarch. I guess you could use guar gum, its the same thing I think. Then stir over med heat till thickened, dont boil it! Add the sausage and heat throughout.
You could just play with it to make country gravy.

I actually made Chicken Fried steak a couple of weeks ago - I made it the regular way except substituted "faux Atkins bake mix" for the flour. I even made cream gravy - using watered down whipping cream in place of the milk. My husband and I thought it turned out just fine!

It wouldn't exactly be country gravy....but when I make my "gravy" for breakfast...i put 1/4 ricotta and thin out with heavy cream...as it cools it thickens back up some.

A little different...but might be good on it!
