Smile olive oil question

could anyone tell me their opinion on whether one can use just plain olive oil verses virgin olive oil on the atkins plan. What is the difference between these two anyway?

Default Olive oil

YOu can use either one, it doesn't affect your your insulin or anyhting. Fat is fat. Virgin Olive is just denser in flavour and has more of the good properties because its the first pressed substance coming out of the olives. Its like gasoline, the cleaner premium gas is better on your car, but if u take regular your car will still run, but not like it will run on the really clean stuff. Hope the analogy helps LOL

P.S Virgin Olive tastes soooo good. Very rich in taste. You might like that on this plan , where being creative with a variety of flavours really helps beat monotony.

Some professional cooks advise using extra virgin on salads etc for the taste and cheaper second pressing for frying.

Virgin olive oil is cold pressed so this means that you have the max amount of nutrients.

Generally, use regular olive oil for cooking, since heating it tends to muddle the flavor. Extra Virgin should have a peppery, fruity taste to it and is great for salad dressing by itself, or added to a dish right before you take it off the heat.
