Jicama BLT
I love to use big slices of Jicama as the "bread" for a sandwich. I choose a very large jicama or two, peel, then slice about 1/4 in thick and store it in a covered container in the fridge. Then I use the slices as needed.
My favorite way is to do a BLT. Bacon, romaine lettuce, tomato, mayo between two slices. So delish!
I also spread peanut butter on a slice and eat. Or I'll do leftover roasted veggies with cheese sprinkled with an Italian style vinaigrette. Deli meat works too. You can do anything really. I haven't tried any hot "sandwich" fillings but maybe I will soon.
