Don't get too exited about gravy with soy flour. It doesn't have quite the same thickening effect as normal flour I'm afraid.
As for mashed potatoes you could try boiling cauliflower until it is really soft and mashing it with some butter and pepper. It looks like mashed potatoes but still tastes like mashed cauliflower. I've made shephards pie with it and it was a hit.
You will find several recipes for spaggetti using soy flour if you do a search.

P.S. You can make fries with turnip instead of potatoes too. I tried it. They look fine but are a little soft and taste a bit too sweet - but they are not bad.
