Durkee brand, AKA Frank's Hot Sauce is what is usually used to coat hot wings in. It's available in almost any grovery store. To make the wings milder, the sauce can be thinned with melted butter.

I don't think 3 lbs. of chicken wings is too much over 1 1/2 days. 60% of the wing is bone, so that's just a little over 1 pound of protein in 1 1/2 days. And any sauce - even sugar free - will have carbs in it.
