Default Batch cooking

How far in advance can you cook chicken breasts? The skinless/boneless kind? I would like to be able to cook 2 x a week.

How long do they take in the oven? What do you marinate them with?

for the new year I am recommitting myself to low carb. I plan to steam huge batches of veggies to take to work with me. haven't figured out how to do the chicken yet. Would love to hear your ideas.

What a great idea! Um, I don't know. But I bet we could cook a bunch at once and freeze them cooked. You think? Then take one out of the freezer and just nuke it for a couple of minutes.

I'm not real crazy about chicken breasts as they get awfully dry (except the recipe below works pretty well with breasts). The best thing to do is google for "chicken breast recipes". That's how I come up with all my ideas.

In fact, here's one of my favorite recipes. Spicy Roast Chicken with Tomatoes and Marjoram

Generally I don't keep chicken in the fridge for more than 4 days. Freezing is always a fine thing.

If you have a microwave at work you probably don't need to even steam your veggies. Get them chopped and ready to go then just let them steam in the microwave. They'll be much better that way, not overcooked. Take some butter with you in a little container and put it on afterwards.

i cook up 2 family size packs at a time on my day off... i usually just salt and pepper them and bake them... i let them cool and freeze them in those ziploc vacuum sealed bags. then i take them out and use them in casseroles later.
or i just make a double batch when i cook something.. i make them a lot that i top with bacon and cheese and bake... i never tired to freeze any... but i make enough for dinner and lunch 3 days at a time....

i'll cook up 3-5 pounds at a time. i buy 40 pounds of BSCB when i buy chicken, and after trimming i get about 15 bags to freeze. i'll bring out a bag or 2 and bake. we eat off that for a week, no freezing involved. we would be my husband and myself.

i also throw a bag's worth into the pressure cooker for shredded chicken - which the 13 year old girl loves for taco meat. again, we eat off of that for a week easy.
