I looked up my old recipe for pre-Atkins eggnog and it looks as if you could do it lowcarb quite easily by substituting cream/water for the milk and artificial sweetener for the sugar.

Ingredients
12 Eggs, separated
215g Sugar (substitute equivalent of sweetener - granulated splenda about 21.5 grams as my packet says it is a 1:10 ratio to sugar)
900ml Milk (substitute half cream/half water?)
240ml Bourbon
120ml Brandy
900ml double cream
Method
1. Beat the egg yolks and sugar together until the mixture forms ribbon trails in the bowl. Add the milk, bourbon and brandy. Mix well.
2. Just before serving whisk the egg whites into peaks, then do the same with the cream. Fold them into the egg yolk mix and pour it into a large jug. Add a grating of nutmeg over the top and serve.
Don't forget:
Raw or lightly cooked eggs should not be served to young children, elderly people, invalids and pregnant women, because of the risk of salmonella poisoning. I read that free range organic eggs are safer than battery eggs.

Of course if on Atkins you would have to have reached the alcohol rung/level of OWL!
