Thumbs up Muffin Recipes

I lived in Hoquiam up until 7 years ago, when we moved to OS. Where in Aberdeen did you work?

Here are my muffin recipes. Would love to have you share any of your favorite recipes.....

Banana Walnut

Pre-heat oven to 350

1 C ground flax seed
1/2 C Vanilla protein powder
2 tsp baking powder
1/2 tsp salt
1/2 C walnuts - chopped

1/4 C oil
2 eggs -- beaten
1 T banana extract -- or flavor of choice
1 C SF Splenda Vanilla coffee flavoring



Mix the above, let sit for a few minutes to thicken if necessary.
Spoon into 12 muffin tins. (scant less than 1/4 cup)

Bake 25-30 minutes at 350 degrees.

Carbs 2.5 per muffin

Chocolate Pecan

Pre-heat oven 350 F

1 C ground flax seed
1/2 C whey chocolate flavour protein powder
2 tsp baking powder
1/2 tsp salt
1/2 C pecans - chopped

1/4 C oil
2 large eggs, lightly beaten
2 tsp artificial maple extract
1 C SF Splenda Chocolate Coffee flavoring

Mix all of the ingredients in a bowl, let stand
for 3 minutes.


Spoon batter evenly into 12 muffin tins. (scant less than 1/4 c)

Bake 25-30 minutes.

Aprox 2 carb each.

Thanks for the recipes!!
I worked for Dr. Rick Hansen in Hoquiam for 3 years...still lived in McCleary though. My ex-husband is a police officer for Aberdeen..I think the town gets bashed alot..but there are great things about it for sure. How do you like living in Ocean Shores??

....it is a small world. My branch manager at the bank I work for goes to Dr Hansen (dentist - right?)

How long ago was your "ex" a police officer, we had a very good friend that was an officer (many) years ago - Jim Hale...

Char...

He is a dentist yes..and still practicing..although he has been in Aberdeen now for a few years. He was in with Dr. Earnest in Hoquiam while I was there...we had a hygeniest that worked with us that lived in OS..her name was Rocky Sage...I think her husband is an atty there in OS.

I dont remember a Jim Hale..how long ago was he there? My ex has been there for about 12 years now I think...

Laura,

I know Rocky, and yes, her husband is an attorney. Rocky also worked at Dr Pritchits office when my daughter did (while she was going to school to become a dental asst.)

Jim was there long time ago - in the late 70's early 80's.

How long have you been dieting - for me (this time) it has been since July. I was at an all time high. This time, it has been pretty easy, and I know it will have to be a way of life for me. I have been "stalled" for about 3 weeks now - with little bits of cheating here and there - that is why I am anixous to get new recipes. The protein shake from my co-worker is so good, and filling. I have to work in our Aberdeen bank this morning, so will go to The Market Place when I get off and get another Splenda SF flavoring. Then I can have a Chocolate-Caramel shake.....***yummy***

Do you have a favorite food you like when you are low-carbing?
