Notice how there is no mention of item prices and customer perception of value measured? Could it be possible that Ruby Tuesdays was trying to make a killing on its healthy menu, and people aren't stupid enough to pay the same price for less food? Is Ruby Tuesdays going to charge me more to take some of the french fries off my plate?

This kind of story has nothing to do with peoples' tastes, or the weakness of any diet craze. Ignoring price is a good way to scapegoat someone besides the greedy person who deserves the blame. You priced your food too expensively. If your Blueberry D'lite parfait had been priced at a dollar each--instead of $5.50--you would have had the hottest-selling dessert on the face of the planet, and you'd get your name in the newspapers, instead of hiding under a desk blaming your own customers.
