Default For the pastry lovers

I have always been addicted to things like donuts and pastries. Pre atkins I would easily go through a box of cake donuts or iced donuts a day, hostess cupcakes, twinkies etc. I still get a craving from time to time for this stuff. Lately I have found the perfect way to combat it. The atkins bake mix is a life saver to me. I have been making one biscuit out of it by just using the 1/4 cup of bake mix plus the other called for ingredients. That way the net carbs on the biscuit is only 3 carbs and it comes out to be a gigantic size biscuit/pastry type thing. When I make it I do add in vanilla, splenda and cinnamon.

For the topping I do 3 various things depending on what I am craving.

If it's a fruity craving I LOVE the smuckers light sugar free jelly. It has 5 carbs per tablespoon so you can use it sparingly but it's good and it does a great job of flavoring it. When I take the muffin/bun/biscuit thing out of the oven I make sure to load it with butter and sometimes some cream cheese spread on top before I add the jelly. I use grape or strawberry depending on the mood. This is a great breakfast or dessert etc.

The other thing I love is to take butter, cream cheese, splenda and cinnamon and make a cinnabon type glaze out of it. It is really good. Once you eat this you will really be satisfied. It has been saving me.

Hmmm, I may have to try this. I haven't had any bread type thing up until the other day. I bought O'solo Banana Nut rolls and will not be buying them again. But a Cinabon sounds good every now and then

I have tried several recipes for the low carb donuts and they were a no go. I have found that cranking up the bake mix with various tasty things like vanilla, splenda etc. etc. is just the best way to go. I plan to try some more experiments with the sugar free syrup. I am beginning to see that the sugar free syrups are a great way to go.

First, congratulations on the 102 pounds - you should be very proud of yourself! I'm hoping to "recapture" my discipline. Your recipe looks like one I can use and still be true to the plan. Thanks!

I, too, LOVE sweet rolls, danish, donuts... I, too, could EASILY eat a whole box of donuts, rolls, whatever!!! I have some Atkins baking mix in the cupboard and plan to try this today.
I had lost about 40 lbs on low-carb, but have allowed myself to eat things I shouldn't and the lbs are creeping back on. My hubby has lost 85 lbs and is better at keeping it off.
I look forward to trying this recipe! Thanks and congrats on your 102 loss! I am hoping to follow in your footsteps!

I tried making blueberry scones with the minicarb bake mix and they were pretty dry (but that coulda been my fault too LoL).

I LOVE the minicarb carrot cake mix though. To better control the portions (cause boy do I love carrot cake!) I make them into muffins. I get 9 pretty big carrot cake muffins at 3-4g carbs each. I also like to tweak them up with some cinnamin, extra vanilla, and maybe some chopped walnuts thrown in.

Also the minicarb chocolate cake mix is pretty good as well. I used it to make LC brownies (didn't follow recipe on the box though). I creamed shortening/lard (its this combo stuff I get at walmart), extra splenda, eggs, and 1oz melted unsweetened bakers chocolate. Added the chocolate cake mix and then added chopped walnuts as well as some water to thin the batter out slightly (was pretty damn thick). I poured the whole thing into a greased 9x13 (I think) and baked it till done. You gotta let the brownies cool completely though because they just fall apart when they're hot. They were REALLLLLLLY good though so I recommend it!
