Dumb question - Milk "ice cream"?
Hello everyone,
Basically my question is pretty straightforward – does milk freeze well if you put it in the freezer? I’m on a south-beach type plan and I’ve been making flavored milk using carb countdown fat free milk and Davinci syrups, and it tastes good, I was just wondering if I could make an ice cream-like treat by freezing the flavored milk, or if it would just turn out gross? I know that if I used heavy cream it would probably work, but I don’t want to add all that fat (and calories). I was thinking maybe I could add xanthan gum to thicken it (?) Has anyone tried anything like this? I know it wouldn't be the same texture as ice cream, but I'm pretty easy to please. I have made yogurt pops before, but yogurt is much thicker than milk to start with. Any advice is appreciated.
