You're right .. it's confusing .. especially since the various creams go by different names from one part of the country to the next. Definitely the higher the fat content, the lower the carbs. - whole milk is anywhere from 3 to 4% fat, usually 3.2% .. and nets 12g carbs 8 fl. oz/ cup ... 1.5g carbs per fl. oz/ 2 Tbsp.
- half and half is cream blended with milk, generally 10% fat ... and has 10.4g carbs per 8 fl. oz/ cup.. or 1.3g per fl oz/ 2 Tbsp
- next is light cream ... also called coffee cream or table cream, depending on the region. It has 18% fat ... 8.8g carb per 8 fl. oz/ cup ... 1.1g per fl oz/ 2 Tbsp
- heavy cream, also called whipping cream .. is approx. 35% fat. It has 6.6g carbs per 8 fl. oz/ cup ... or 0.8g per fl oz/ 2 Tbsp
