Default Low carb Milk

Low Carb Milk - recipe by Carol of this board

“Milk” can be made if you take a quart of half-n-half
Mix it with equal parts of cold water plus an extra 1/4 cup (use a good bottled water)
Add a teaspoon of Splenda (it takes the place of the lactose)
Mix well and chill overnight.
It will stay fresh for 3–5 days

If you liked your milk "skim" before going low carb, you may want to add more water.
If you liked "whole" milk, try making it with 1/2 table or whipping cream and 1/2 half-n-half. The mix as I make it appoximates 2% milk.

So, how many carbs are we talking about? Well, it depends on how you make it. If you make it according to these primary directions and have a 6–8 oz glass, it will run you 4 to 5.5 carbs.
If you make it with half cream you can get the carbs down to about 3 grams per glass. Ditto for making it in the "skim" version.

That's a good idea. I'll have to try that.

I love milk and that is one of my hardest thing about following a low carb diet for me.

I can't wait to try this! I found these low-carb cookies at a specialty store when I was back home, and they're terrific. Unfortunately, water was not as tasty as a nice cold glass of milk would have been.

I can also see myself drinking this with Atkins new Caramel Nut Enduldge Chocolate Bars... (they taste like Snickers!!)

Isn't soy milk allowed?

I think it has 8g carbs for 8oz
I've tried it and it isn't so bad - actually tastes sweet, like vanilla milk - got it at Mother's Market for $2.79

Just thought I would let you know that you may want to be careful with those bars.... there are hidden carbs in them. I was eating 2 - 3 a day, thinking they were just 2 carbs... HA - I guess the carbs that they say are not counted, really are counted - some have 14 carbs a bar!

I started doing a similar thing with soy milk...but most soy milks are too high in carb because they're sweetened...sounds like you are using the Westsoy unsweetened vanilla (btw it's $1.99 at trader joes!)...it's pretty good, but the Vitasoy Unsweetened Creamy Soy Milk taste a little better...better consistency, less grainy taste...I add 1 or 2 tbs of cream sometimes and to give it a real milky taste...it's perfect by the glass and over the Keto Cocoa Crisp cereal, which you can also get at Mother's (or most of the online merchants).

BTW, the VItasoy and Westsoy unsweetened milks have only 5g of carbs!
