Question Anyone Using Cauliflower As Faux Fried Rice?

I read this somewhere (possibly on this board in the beginning) but I have been using raw cauliflower and making fried rice with alot of success. I chop a whole head finely in the food processer and keep in the fridge. I've used it with sausage and even with Spam (I know--but heck I was raised on Spam). I stir fry my meats, garlic, a little onion and put the cauliflower in last. Anyone who has tried this can't tell it's cauliflower and thinks it is RICE. I like it especially with lemon pepper and salt, but also a little teriyaki is great. Just wondered if anyone else was doing this. It's become one of my staples~~bella

I make 'rice' all the time! I have done something new with Cauliflower. If you cut up the cauliflower head in chunks, and put it in a roasting pan, all you do is put on pats of butter and some chopped garlic, alittle white pepper. Roast till all little brown, stir once. Oh its so good! Its a favorite of my childrens!

Default we tried this last night

We tried this last night and it is now one of our favorites. I added just a little soy sauce and even my daugher loved it. Just wish cauliflour hadn't gotten so expensive!

I try to buy cauliflower when it is on sale and then generally 2 or 3 heads. Here is the big question! Does anyone know if chopped raw cauliflower can be frozen in freezer bags? How does it hold up since it's going to be stir fried anyway?? Knowing whether this works might allow me to buy a little more on sale and prep it ahead.~~Bella

According to my divine hairdresser - cauliflower freezes very well when its raw...just cut it up into flowerettes, give it a wash and freezer bag it as airtight as possible.

I make a great cauliflower potato salad....also makes good Spanish Rice and another of my favorites..cauliflower stuffing..fry onions, celery, sage sausage, cook cauliflower in micro until soft, mash into smll piees, ad to meat mixture..serve w/chicken or turkey..don't have carb counts. Also am going to make cajun rice or dirty rice.

Sorry..make that pieces..also I find my cauliflower frezzes better if I blanch it first...dip into boiling water for about 1 min. remove and place in ice bath for several min..drain and then freeze.

Default Cauliflower rice & potato salad

Good morning, 5 a.m. here.

I've never tried cauliflower as rice. What a good idea. It works great as potato salad. I'm going to try cauliflower rice this afternoon with chicken ala king.

For the person who was looking for a potato salad recipe here is mine.
Fresh cauliflower cut into bite size pieces and microwaved until cooked but not mushy. Let cool.
add green onions, chopped hard boiled eggs, mayonnaise and salt and pepper.

Adding a little vinegar kicks up the flavor but it's good without it too. I served this to my Mother, who loves potato salad, and I had to tell her it was cauliflower she couldn't tell the difference.

The recipe that I use says to to stir fry the "rice" for 8 minutes. It works well. Fantastic and the teenagers eat it up. It is so good that they ask for it. Never thought they would like califlour that well. Enjoy.

I just tried the Cauli-flied rice dish last night for the first time and am so happy! It was excellent! My soon-to-be DH loved it as well.....used shrimp and smoked pork. I am constantly grateful for finding this site!
