Sally, you'd actually do better to eat 5 or 6 smaller meals throughout the day. Women who eat this way have an easier time losing fat and are less likely to gain weight. It helps to keep metabolism raised as well as insulin stablizied.
You don't eat more, you just eat more often so the meals are smaller and more easy to manage.
Whenever you want to add calories sans carbs look to fat as your friend. It's calorie dense and it's metabolically netural (it will not effect insulin or glucagon)
