Default Any Good Side dishes?

I like to rotate my dinner meats around the week so ill usually have Chicken , FIsh or steak. Ill have a meat with asparagus wiht a few ounces of cheese , or ill cut up a meat and put it in a salad. THis is getting quite boring , any suggestions out there for low carb Side dishes?

Post Cauliflower & Broccoli Casserole

I like this as a side dish and it's even better re-heated:

One bag frozen cauliflower & broccoli flourettes...thawed and microwaved in a plastic wrap covered bowl for about 10 minutes or until soft.

Mash with a potato masher until mostly smooshed.

Add 4 oz softened cream cheese, 2 tablespoons butter, 1 cup grated cheese (whatever kind you like), 2 tablespoons sour cream, black pepper to taste.

Spread into 9 inch glass pan sprayed with Pam.

Top with grated parmesan cheese and bake at 350 for 30 minutes or until desired brownness. I like mine very brown.

Great with meat.

My personal favorite is yellow squash, broccoli, cauliflower or zucchini (or a mixture) microwaved for 4 mins on high with butter and basil. You can also sprinkle with some parm for a different flare

Wow those are some awesome ideas i never would have thought of , Thanx for the suggestions, Ill finally be able to add a little more variety to my dinners. You guys Rock!
