There was a really good quote from the "Fat Wars" book I read on low-carbing by Brad King. He says a certain Dr. Michael Colgan wrote,

"Oh, the human system is ingenious at making do with inadequate building materials, patching, stitching and pinch-hitting, but it can't build premium tissue from garbage. A Twinkies-and-coffee diet produces a Twinkies-and-coffee body. For optimum performance you have to eat optimum protein to build optimum structure-period."

I like this. I think I'm going to cross-stitch this quote, frame it and hang it in my new house.

Or else, I didn't get it

I don't mind high fiber grains once in a while, but the grain industry, particularly the Wheat Council are targeting low-carb diets with a vengence. See the "Studies" section.
