Question Ezekiel Bread

Hello group!

I have been low-carbing for two weeks at the suggestion of my mother, who has been doing it off and on for years with great success.

My mother eats a slice of the Food For Life brand Ezekiel 4:9 bread every day. I am apprehensive to eat this bread as it has a lot of carbs. My mother insists that since the bread is made with sprouted grains, the carbs are assimilated differently by the body. She has eaten it every day and still has had success. I was wondering if anyone else has had experience with the Ezekiel bread?

Haven't eaten that bread but I found a new bread a number of months ago that is also made w/ sprouted grains. The brand name is HealthyWay and they make a number of different types of bread. I buy the Flax bread because it has an ECC of 5.8 carbs per slice. Each slice is rather thick too so I usually eat only one slice when I do eat it.

I have a friend who knows a lot about naturopathic medicine and natural foods. She told me that the body does assimilate sprouted grains differently. It does not raise insulin levels like grains that have been put through any kind of refining process (this includes whole wheat grain--it has still be through a kind of refining process).

Perhaps Doreen knows a bit about this. She is extremely knowledgeable about different food and how they affect the body.

Actually, from my vegetarian days .. I sprouted everything -- move over alfalfa! Lentil and wheatberry sprouts were favourites. Wheat sprouts are awesomely sweet-tasting .. the sprouting changes the carbs from difficult to digest starch to simple sugars .. which provide ready fuel for growing a plant. Since some of the sugar is used up by the growing living sprout, the carb count is a bit lower than in the whole wheat kernel.

I can't find any specific information on the sugars in sprouted grain, but I'm assuming it's fructose and/or maltose (malt is made from dried sprouted barley). From what I can find, they have a lower glycemic value than the whole grain, and flour for sure .. probably they will act similar to low-carb fruit such as berries. So, as long as you account for the carbs, enjoy!
