Is it okay to assume that if I'm in ketosis, I'm burning fat and I should just keep on doing what I'm doing ??

I have heard others speak of slowing down ...if in ketosis, your body is just adjusting, keep doing what you are doing. If it still continues, check into the chatroom at Atkinsfriends.com and ask folks....theyll chat with you re what you are eating etc and help you troubleshoot. keep on keeping on, you are doing great!

If you are in ketosis, you ARE burning fat - that's where the ketones come from. The question is whether you are burning only dietary fat or body fat. As long as you are not going overboard on your calorie intake you are almost certainly burning at least some body fat.

Yes, you're burning fat. You would have to be eating in excess of 5000 calories (give or take a few ) to be burning mostly dietary fat. At 300 lbs you can safely eat over 3000 calories a day and still burn body fat. It is unavoidable that some dietary fat will be burned. Just be sure you are eating enough - under eating is a common cause for stalling in newbies.
